Anti-waste Recipe – Vegetarian Meatballs

Ingredients (10/15 meatballs)

  • 3 oz string beans
  • ½ clove of garlic
  • 3 oz potatoes
  • 1 egg
  • 1,5 oz mushrooms
  • Grated cheese
  • Salt
  • Breadcrumbs
  • Oil for frying

Directions

Boil the string bean for 10 minutes and the potatoes for about 20 minutes in two separate pots. Meanwhile, cook the mushrooms for 10 minutes in a large pan with a drizzle of oil (if you use pre-cooked mushrooms there is no need). Then, put the string bean and mushrooms in a mixer adding ½ clove of garlic. Pour the ingredients into a bowl together with the mashed potatoes, eggs and season with salt and grated cheese. Make meatballs with your hands and roll them in breadcrumbs.

Let them rest in the fridge for about 30 minutes and finally fry in boiling oil for about 3 minutes. For a healthier alternative, you can cook the vegetarian meatballs in the oven for 20 minutes at 356°F, using our aluminium container.
